Creamy Lemon Poppy Seed Dressing

Ingredients: 

1 cup raw cashews, soaked overnight

2/3 cup dairy-free unsweetened beverage

1/2 cup fresh-squeezed lemon juice (about 3 lemons)

1/4 cup honey or maple syrup

1/2 teaspoon Dijon mustard

1 tablespoon poppy seeds

 

Instructions:

  1. Put all the ingredients in the blender except for the poppy seeds
  2. Blend until smooth and creamy, about 1 minute
  3. Pour the dressing into a container and stir in the poppy seeds
  4. Chill in the fridge for a couple of nights or overnight. It will thicken and the flavours will blend together as it sits. If it thickens too much, whisk in a little more milk or lemon juice, to taste, as needed
  5. Store in an airtight container in the fridge for up to 1 week

 

(Makes 1-1/2 cups)
