Ingredients:
1 cup raw cashews, soaked overnight
2/3 cup dairy-free unsweetened beverage
1/2 cup fresh-squeezed lemon juice (about 3 lemons)
1/4 cup honey or maple syrup
1/2 teaspoon Dijon mustard
1 tablespoon poppy seeds
Instructions:
- Put all the ingredients in the blender except for the poppy seeds
- Blend until smooth and creamy, about 1 minute
- Pour the dressing into a container and stir in the poppy seeds
- Chill in the fridge for a couple of nights or overnight. It will thicken and the flavours will blend together as it sits. If it thickens too much, whisk in a little more milk or lemon juice, to taste, as needed
- Store in an airtight container in the fridge for up to 1 week
