Zucchini Burgers

Ingredients

  • 2 Cups grated zucchini
  • 1 ½ tablespoons chicken-like seasoning or 1 stock cube
  • ½ teaspoon salt
  • 1 Cup organic sprouted oats (or regular rolled oats if not available)
  • ½ Cup gluten-free flour
  • 1/3 Cup chopped walnuts
  • ¼ Cup Nutritional Yeast Flakes
  • 1 or 2 Cup grated carrots
  • 1 finely chopped onion
  • 1 clove minced garlic (or more if you like garlic!)

Instructions

  1. Place zucchini in a bowl and mix in the chicken-like seasoning and put to one side while you prepare the other vegetables.
  2. Add ingredients into the bowl as you have them ready and mix well.
  3. If the mixture seems too wet to form burgers, leave in fridge overnight to allow the oats to absorb some of the moisture or add a little more oats or flour. I usually make up the mixture one day and then make the burgers the next day.
  4. Form burgers with Tupperware burger mold or wide-mouth canning jar lid.
  5. Place burgers on parchment paper lined baking sheet and bake at 350 for 30 mins.
  6. Turn and bake another 15-20 minutes on other side until lightly browned.

Note: I usually make several batches of these at a time, and then freeze the burgers with parchment paper in between to prevent them sticking together. You can just take a couple out at a time and cook on a grill.
