Ingredients
- 2 Cups grated zucchini
- 1 ½ tablespoons chicken-like seasoning or 1 stock cube
- ½ teaspoon salt
- 1 Cup organic sprouted oats (or regular rolled oats if not available)
- ½ Cup gluten-free flour
- 1/3 Cup chopped walnuts
- ¼ Cup Nutritional Yeast Flakes
- 1 or 2 Cup grated carrots
- 1 finely chopped onion
- 1 clove minced garlic (or more if you like garlic!)
Instructions
- Place zucchini in a bowl and mix in the chicken-like seasoning and put to one side while you prepare the other vegetables.
- Add ingredients into the bowl as you have them ready and mix well.
- If the mixture seems too wet to form burgers, leave in fridge overnight to allow the oats to absorb some of the moisture or add a little more oats or flour. I usually make up the mixture one day and then make the burgers the next day.
- Form burgers with Tupperware burger mold or wide-mouth canning jar lid.
- Place burgers on parchment paper lined baking sheet and bake at 350 for 30 mins.
- Turn and bake another 15-20 minutes on other side until lightly browned.
Note: I usually make several batches of these at a time, and then freeze the burgers with parchment paper in between to prevent them sticking together. You can just take a couple out at a time and cook on a grill.
